I love pancakes! To be honest, I love anything cake-like, so eating pancakes for breakfast is one of my favourite things. My mum still makes the best ones, but I have come up with a pretty great, super simple and healthy recipe, so they can be eaten a little more often.
To make: mix one mashed banana and one free range egg. Add 1 heaped tablespoon of Naked Seeds maca and chia pancake mix (or a mixture of buckwheat flour, maca powder and chia seeds). Add a splash of water and let sit for 5 minutes before gently frying in coconut oil. Top with Loving Earth Coconut Chocolate Butter or organic honey and your favourite berries. Seriously - YUM! Double this amount for two serves, and so on.
