i heart burgers!

I LOVE a good vegie burger and they're not always easy to find! I was looking for a good recipe recently and came up with this one of my own when I had some left over baked sweet potato. Possibly the best vegie burger I've ever had, if I do say so myself ;)


Ingredients:

1/4 cup red lentils, cooked
1/4 cup quinoa, cooked
1 1/2 cups baked sweet potato, mashed
1-2 clove garlic, minced
1 small brown onion, chopped
1 tsp cumin
1tsp tumeric
1 tsp paprika
Half a bunch fresh corriander, chopped
Cup baby spinach
Salt and pepper
1 tsp coconut oil
1 tbsp flour*

Steps:

Saute garlic and onion in coconut oil for about 7 minutes, add spices, salt and pepper lentils, quinoa, spinach and sweet potato and mix thoroughly with a wooden spoon. Turn off the heat and let cool down before shaping into large patties. *I used a bit of flour on my hands while shaping them, but this is optional. Fry patties in coconut oil, add to a wholemeal bun and top with whatever you like! I used tomato chutney, light mayo and more baby spinach. SO YUM! I made 5 big patties and froze the other 4 to enjoy another time. Enjoy!
