low fat mixed berry muffins

Lately I've been making up my own recipes! From out of my head! Crazy huh?! I've learned a lot about eating clean and alternate ingredients this year, and coming up with this mixed berry muffin recipe was easy. And they taste great! Enjoy.

Makes 9 muffins:
1 cup organic spelt flour
1/4 cup linseed meal
1 tablespoon chia seeds
1/2 cup stevia
3 tsp baking powser
2 free range eggs
35g light butter
100g almond milk
200g mixed frozen berries

Preheat oven to 170 degrees celsius. Line a muffin tray with 9 cupcake liners.  Mix the dry ingredients together and the wet ingredients together, separately. Make a well in the middle of the dry ingredients and pour in the wet. Stir the dry ingredients into the wet slowly. Add a splash of water if its too thick. Add the mixed berries last and stir through. Fill cupcake liners about 2 thirds of the way and bake for 20ish minutes. They should spring back when cooked, or a skewer comes out clean.

About 125 calories per muffin.
